Master the foundations of classical French cooking in a focused 12-week training program designed to build real technique, calm execution, and the confidence to cook complete, well-structured meals at home. Each week develops one essential skill set — from knife work, seasoning, emulsions, and heat control, to stocks, sauces, soups, poultry, braising, and fish — turning core methods into repeatable habits you can rely on in any kitchen. The emphasis is on understanding why techniques work, so you can adapt, correct, and cook with intention. To support deeper study without overwhelm, the program includes an extensive optional bonus library of classical French lessons and technique refreshers. These are not required to complete the course, but are available for students who want to expand their repertoire or revisit specific skills at their own pace. Selected weeks include practical submissions and reviews, allowing you to apply what you learn, receive feedback, and progress steadily — week by week, skill by skill.
